I've been living in France for 8 months and have been to a lot of great towns that deserve their own day for a day trip!
I'll break each city down into things to see and if they're worth visiting.

Annecy
Annecy is located in the French Alps about an hour from Geneva, Switzerland. You really only need a day in Annecy to check it out. It's very touristy but a cute town.
The most popular thing to see in Annecy is the canal system through the old town that leads to Lake Annecy. Lake Annecy has crystal clear water and in the summer is a great spot to spend the day swimming or renting one of the paddle or motorized boats.
There are a ton of restaurants to choose from in Annecy when you decide you're hungry.
Yvoire
Yvoire is close to Annecy and is on Lake Geneva. It's a really cute Medieval town. You could definetly pair Yvoire with Annecy as you only need an hour or so in Yvoire to explore the streets and shops.
Amiens
Amiens is an hour train ride from Paris.
We were told the Cathedral could fit inside Paris Notre Dame so we went to check it out. It was huge and beautiful and has amazing stained glass.
There is a little canal system there where you can take a boat into the gardens. We didn't do it as it was raining but wished we did!
Jules Verne the famous Author of "Twenty Thousand Leagues Under The Sea", lived in Amiens and you can walk by his home.
Rouen
Rouen is a super cute city on the Seine River a few hours from Paris.
The Rouen Cathedral is beautiful and definetly worth seeing!
Rouen is also the town where Joan of Arc was burned. You can visit the church dedicated to her and see the site where she was burned.
There are lot's of great shops and restaurants to check out in Rouen as well.
Carcassonne
If you like Disney movies, then you need to visit Carcassonne to see their Medieval Castle. I think Disney used this Castle as inspiration because it's amazing!
There are tours where you can pay to go inside the Castle as well.
In the evening the streets come alive with popular restaurants opening for the evening around the Castle walls.
